Super Easy Cheesecake

2 8-ounce packages cream cheese, room temperature
3/4 cup sugar
3 eggs
1/2 teaspoon vanilla
graham cracker crust(s)

Beat cream cheese. Beat in sugar until well blended. Add eggs and vanilla. Beat until smooth.

Pour into graham cracker crust. Bake at 300F for 30-60 minutes depending on the width and depth of your pan, until center is firm.

Storebought graham cracker crust makes this recipe super easy. I think you need 2 of them for this recipe. (I have a gluten problem, so I generally make my own crust.)

Graham cracker crust:

1/2 cup melted butter (for gluten free graham crackers, use only 1/4 cup)
1/4 cup sugar
1-3/4 cups graham cracker crumbs (as I remember, it's 1 packet of regular graham crackers. GF graham crackers come in smaller quanties, so it's usually the whole box. I crumb-ify them in a food processor.)

Combine sugar and crumbs. Mix in butter. Press into pan.

For cheesecake, I don't precook the graham cracker crust. You would want to if making an otherwise no-bake pie. 350F for 10 minutes or so.

When making this recipe, I generally press the crumbs into a 10-inch springform pan. Bottom only crust is easier than trying to get them up the sides, particularly with GF graham cracker crumbs.
